The past two months have brought many challenges to the restaurant industry. Fortunately, it has also afforded us time to reassess and reflect on how we will best serve our guests when we open again. Clover has invested in making the dining experience even better. Including updating our kitchen and readying our team to meet and exceed the new standards set due to Covid-19. Clover is ready to welcome our guests back the first week of June and we cannot wait. We are excited about our new summer menu along with our special delivery/curbside menu options. Also, introducing everyone to our new Executive Chef, Bryan Doyle.

Chef Doyle brings 13 years of culinary experience to Clover. He began his culinary journey as a sauté cook at the Davenport Hotel. In 2014, Bryan pursued an opportunity to work in a smaller upscale venue which led to his position as a lead at Clover. In 2016, Bryan accepted the challenge as the executive chef at Durkin’s Liquor Bar. Missing the teamwork and mission of Clover, Bryan came back ‘home’ in 2018. Bryan believes his journey has now brought everything together for him: how to focus on creating the type of culinary experiences that are a signature to Clover.

His summer menu is fresh, relatable, and guaranteed to make summers on our patio our guests’ second home. Bryan finished second in the vegetarian category of the 2018 restaurant wars. He competed in First Bite Spokane, Iron Chef, Restaurant Wars, Crave and continues to host beer and wine dinners with local purveyors at Clover. A “homegrown” Chef hailing from Spokane, Washington, Bryan lives with his wife Sara and two children. While Bryan is incredibly involved in the Spokane Culinary community, when he is not cooking, you will likely find him spending time with his family.

What’s NEXT!

We are still putting the finishing touches on our restaurant to assure it is ready to welcome guests safely. It will be a few more weeks until we open our doors. Until then, we are offering our guests our Summer Curb Side pickup or Delivery Menu, starting Tuesday, May 26, 2020. We are passionate for quality and fresh ingredients and excited about our menu options which focus on affordable family meals. Until our guests can dine on our patio, we are bringing our summer dishes to theirs.
